Grain Salad With Lemon and Herbs

CLEAN eating is about ingesting real foods that make us feel good and nourished. The grain salad with lemon offers a dose of detoxifying herbs, parsley and cilantro.  It is also loaded with plant protein ( Brown Rice + Chickpeas + Hemp Seeds + Pine Nuts ).

 

INGREDIENTS:

1 cup cooked short-grain brown rice

1 cup chickpeas

1/2 cup chopped parsley

1/2 cup chopped cilantro

1/3 cup toasted pine nuts

1 small sweet potato, diced into blocks

1/2 cup basil or mint (optional)

For the dressing:

 

1/2 tsp Himalayan sea salt

1 tsp freshly grated lemon zest

1 tsp ground cumin

3 Tbsp fresh lemon juice

3 Tbsp extra-virgin olive oil

 

DIRECTIONS:

Bake the sweet potato at 400 for 20 to 30 minutes. Cook the rice while the potatoes roast.  Allow both to cool slightly.

Chop the herbs and toast the pine nuts. Make the dressing. Combine all ingredients together and serve.
